I don’t know about y’all, but I LOVE Mexican food. Trying to stay healthy and keep that habit between the lines is tough. Normally, Mexican food is full of salt, cheese, and carbs. So, I’ve played around with some options and found one of the best low carb recipes for tacos that I want to share!
Ingredients:
For these carb smart tacos you will need –
- Carb smart shells – pick whatever brand you like best!
- Chicken – we eat ready-made chicken that we shred and pop into the microwave
- Cheese – again, pick your poison! You can go dairy free or pick whatever shredded cheese option you love most
- Taco Sauce – we use Taco Bell’s mild and hot sauces on rotation, just watch your sodium content
- Light Sour Cream (optional)
- 1/2 Avocado (optional)
- Queso Sauce (optional) – I use and love the Old El Paso brand
Of course, feel free to modify these to your needs! If you hate sour cream, leave it out! If you would rather switch the chicken for beef, go for out!
Instructions and Portions:
I usually use whatever 1 serving size is considered in my portions and divide that by the amount of tacos I’m having. So whether it’s 2 or 3, the only portion that changes is the number of shells I’m using. I also don’t measure out my taco sauce because I never use more than a few splashes.
Here are my normal portions:
- 84 g Chicken
- 28 g Cheese
- 2 tablespoons Lite Sour Cream
- 1 tbsp Queso Sauce
- 1/2 Avocado
- 2-3 Carb Smart Soft Taco Shells
If you’re like me and either don’t like to prep chicken ahead of time or you’re just all about convenience, this is the best ready made chicken EVER! I buy it at Wal-Mart and Kroger, so it is readily available.
Everything else is player’s choice as to what you like best! I usually alternate my cheeses to keep things interested along with the sauces I use. Here are some examples of my typical choices:
I start by measuring out all my portions to have them ready to roll! I will shred and heat my chicken first in the microwave for 30 seconds. Then I will warm up my taco shells for about 20-25 seconds. After that I usually chop up my avocado to have everything ready to build!
This is all about preference, but I usually stack my tacos like this:
- Shell
- Chicken
- Cheese
- Hot Sauce or Queso Sauce
- Avocado
- Sour Cream
Obviously everyone will do this differently, but from start to finish these should take you less than 5 minutes to be ready!

Here’s a screenshot of the calorie breakdown for how I build my tacos. I use the same chicken and carb smart shells every time. I usually stick with reduced fat shredded cheese, light sour cream, and rotate adding in avocado depending on where I’m at with my daily fats. You can see this meal ends up being somewhere between 380-400 calories, but fills me up like 700 calories would!
